Making a encrypted persistent Kali Live USB Stick

I have got a 64GB PNY USB 3.0 Stick.
I am trying to install the kali-linux-2018.4-amd64.iso with my Razer Blade(512GB Samsung SSD) running Windows 10 onto the stick and use the remaining space on it as a encrypted persistence partition.
Unfortenutely, following tutorials didn't work for me because most of them are only for specific hardware-configurations, so I hope someone can give me a brief step-by-step tutorial.
When I burn the iso with Etcher onto the USB Stick and select UEFI: General USB Flash Disk 1100 (I have got the options Windows Boot Manager (Samsung ...), UEFI USB Flash Disk 1100 and UEFI USB Flash Disk 1100, Partition 2), Live system and then run gparted, I have the options /dev/nvme0n1 and /dev/sda.
Under /dev/sda, it is the only partition with the format iso9660, the label Kali Live and the size 60.11GB. Used, Unused an Flags only say "--". I cannot make a new partition. When I select Partition>Format to>ext3 and then apply all operations, I get an error with mkfs.ext3 -F -L "/dev/sda" saying "/dev/sda is apparently in use by the system; will not make a filesystem here!".
What should I do to fix this?
