CalDav/iCal Not Working as Desired

Some issues with our CalDav setup I'm hoping someone can clarify.
We run an e-mail server at work which serves all of our employees Calendars and Mail accounts. All employees are on Mac using Apple Mail / Apple Calendar.
There are three annoyances that we are trying to solve:
When someone outside of our team "accepts" an iCal invitation, we do not receive confirmation in our calendar or e-mail (just grey question mark next to name in Apple Calendar app)
When someone receives a Calendar driven invitation (i.e. the user invites guests from the calendar, and that sends an e-mail invitation to the guests), the "from" email is not necessarily the primary account of the user for the recipient, and could be one of the employees selected aliases at random.
When a recipient hits reply on one of our invites, the reply-to is always
com.apple.+32424....@ourcompany.com
(i.e. the mail server address). These replies don't actually go anywhere the sender can see - not in their email or calendar.
Any tips?
