Can you generate a permanent, full organization token on Azure DevOps to use with the REST API?

Ok, I am in charge of an Integration platform. We use REST APIs on most of the cloud-based software we have internally to query data and store it in the integration platform before querying it again with joins to do low-level BI.
We would like to integrate Azure Devops.
Problem is, I only seem to find documentation about generating a personnal token with which I would only be able to query my related work items. I would like to retrieve ALL work items and ALL projects etc.
Is it possible? Do I have to create my own connectors? Help!
